Bittergourd, also called bitter melon, is super healthy. It is a very popular food in many Asian countries. In other parts of the world, people are reluctant to try this cucumber-like fruit because of its bitter taste. Cut the caps off the bittergourd. Cut the fruit in half and scrape out the core with the seeds. Cut the bittergourd into small cubes. Sprinkle amply with salt and leave to soak for 15 minutes. This will draw the bitter taste from the flesh of the fruit.
Whisk the eggs in a bowl, together with the cream, pepper and salt. Peel and dice the sweet pepper and add to the whisked eggs. Finely chop the parsley and add to the eggs. Stir well.
Thoroughly rinse the bittergourd and squeeze out the moisture. Add the fruit to the egg mixture. Stir well once again. Fry an omelette and allow to set slowly over a low flame.
Roll up the omelette and cut into 2-cm slices. Stick in the cocktail sticks and garnish with a little lemon cress.
