Fennel is well known for its unique flavour and fresh taste. It is the main supplier of the colour ‘white’ in the ‘five colours of health’, in the Italian diet. Fennel is also known to benefit lactation and has many other health benefits. It can also be grown organically.
Consumed fresh, by itself or with orange, dried tomatoes and olive oil, it has a strong flavour on the table. North European and overseas countries are starting to discover its value, with consumption on the increase. It is however mainly eaten cooked and not as a fresh salad.
Breeding takes place in Italy with Enza Zaden aiming to produce varieties for all harvest periods that are of the same standard as Preludio, one of the main spring/summer varieties. Enza Zaden aims to breed varieties that are reliable in various climates.
