Creative cucumber

How to be creative with cucumber! Thick cucumber slices can be turned into attractive cups. Fill them with hummus and some salad and present the festive and healthy appetizers on your next party or get-together.

Ingredients (for approximately 8 appetizers)

1 cucumber
Small container of hummus
Small container of crab salad
Beetroot leaves

How to prepare

Peel the cucumber and cut into 1.5-cm slices. Cut out equal rounds using a small dough mould. Scoop out a little cucumber to make a cup. Season with pepper and salt.

Fill up half of the cucumber cups with crab salad and garnish these with beetroot leaf. Fill up the other half with the vegetarian version: hummus, and garnish with parsley. If desired, add a little more salt to taste.

If you like, you can serve the cucumber cups with any other type of filling. Use your imagination!
