Chicken skewers with salsa verde

Seasoning is the spice of life. At least in the kitchen. This salsa verde will add a delicious touch to your chicken dish. The skewers will be a great success during your party or walking dinner. And don’t forget to put a few on the barbecue!

Ingredients (for 1 litre of salsa verde and 4 skewers)

  • 1 chicken filet
  • 100 ml red-wine vinegar
  • 150 g shallot
  • 10 anchovy filets
  • 4 egg yolks, hard-boiled
  • 30 g pine nuts
  • 50 g breadcrumbs
  • ½ l olive oil, extra vergine
  • 80 g parsley
  • 35 g basil
  • 1 orange
  • Pepper
  • Salt
  • Shiso purple

How to prepare

 Season the chicken with pepper and salt and sprinkle thoroughly with olive oil. Lightly grill the skewers and bake until done for a further 5 minutes in a preheated oven of 180°C.

Strip the stems from the parsley and basil. Add to the other ingredients and mix together in the food processor. Stir the mix once or twice. Note that the salsa verde should not be runny.

Spread out some salsa verde over the skewers. Provide a finishing touch with a few shreds of orange peel and garnish with shiso purple. Serve some extra salsa verde on the side.
