Spinach quiche bites with duck

A real treat for everyone

Quiche bites are a real treat for young and old. The little ones will enjoy them as well! Practical detail: you can prepare these appetizers in advance; at the supreme moment, all you have to do is finish them off in the oven.

Ingredients (for 6 persons)

  • 3 sheets of puff pastry
  • 1 tablespoon of creme fraiche
  • Greek yoghurt
  • 50 g of smoked duck
  • Pecorino cheese
  • 150 g spinach
  • 1 egg yolk
  • 1 tablespoon of pine nuts
  • Olive oil
  • Pepper
  • Salt
  • Beetroot leaves

How to prepare

Boil the spinach in a little water. Grease tartlet moulds with olive oil. Use a dough mould to cut out little rounds from the puff pastry sheets and pierce the rounds with a fork. Put the rounds into the moulds.

Put the creme fraîche into a bowl, together with the Greek yoghurt, the egg yolk, the grated pecorino, the pine nuts, pepper and salt. Mix well. Dice the duck and add to the mixture. Chop the spinach and stir through the mixture.

Fill up the moulds with the mixture and bake in a preheated oven at 170°C for 15 - 20 minutes. Arrange the appetizers on a dish and garnish with beetroot leaves.
