Broccoli as a party dish? Why not! Feast your eyes as well as your taste buds on this delicious salad. It will add a touch of elegance to any buffet or dinner party.

Ingredients (for 6 persons)

  • 150 g eel
  • 10 olives
  • 100 g feta cheese
  • 10 almonds
  • 400 g broccoli florets, blanched al dente
  • 10 pickled gherkins
  • Olive oil
  • 1 orange
  • Pepper
  • Salt

How to prepare

Arrange the blanched broccoli florets on a dish. Dice the feta cheese and strew the little cubes over the broccoli. Chop up the olives - not too finely - and distribute these over the salad as well. Repeat for the gherkins and the almonds. Cut up the eels and add to the salad. Sprinkle some olive oil and add pepper and salt to taste. Garnish the salad with a few shreds of orange peel.
